Cooking with Kendall: Chocolate Cream Cheese Swirl Cupcakes

I don’t know about you, but I love cupcakes! Cupcake shops are popping up in every city and the flavors are becoming more and more unique. For me, most cupcakes come with too much icing, so these cupcakes are perfect and very fun to make. Get the children in your family involved in piping the designs on top. Just be sure to make the lines of cream cheese thick so your artwork will hold up during baking. Enjoy!

 

Ingredients:
1 package (8 oz) cream cheese
1/2 cup sugar, plus 4 teaspoons
4 eggs
1 bag (6 oz) semisweet chocolate chips (1 cup)
1 package Betty Crocker devil’s food cake mix
1 1/3 cup water
1/2 cup vegetable oil

Instructions:
Preheat oven to 350. Place paper baking cup in each of 24 medium muffin cups (I ended up making 30). Soften 6 ounces (part of 8 oz block) in microwave in a small bowl. Add 1/2 cup sugar and 1 egg. Beat with mixer until smooth. Stir in chocolate chips and set aside.
Now, prepare the cake mix as directed with 1 1/3 cups water, 1/2 cup vegetable oil, and 3 eggs, and beat with a mixer.
Spoon one spoonful of cake mix into the bottom of each cup, then add a small spoonful of the cream cheese. Top with more cake mix.
Soften the remaining 2 ounces of cream cheese, reserved from earlier. Add 4 teaspoons sugar and blend until smooth. Pour into plastic baggie and snip a tiny corner.
Pipe designs of your choosing into each cupcake.
Bake 20 to 25 minutes or until toothpick comes out clean when inserted.

Serves: 24-30 cupcakes
